Veal Saltimbocca ( Recipes )

A hearty lunch or breakfast.

Veal Saltimbocca


  • Oil spray
  • 400g thin veal steaks
  • 8 sage leaves
  • 8 slices of lean ham
  • 1/3 cup of white wine
  • ½ cup Philadephia cream for cooking extra light
  • 2 teaspoons of mustard
  • 1 small brocoli head, steamed


Heat frying pan that has been lightly sprayed with oil. Top each piece of veal with 1 sage leaf and 1 slice of lean ham. Ensure the pan is hot before adding veal, and don’t overcrowd the pan or the veal will stew. Add the veal, ham side down and cook for 1 ½ minutes. Turn and cook for 1 minute. Transfer to a plate and cover with foil to keep warm. Add the wine to the pan and cook for 30 seconds. Add cooking cream and mustard. Cook, stirring for two minutes or until sauce thickens. Pour sauce over veal steaks and serve with steamed broccoli.
