Chicken Satay Cups


  • Ingredients ( serves 4)
  • 1 tsp of peanut oil
  • 400g lean chicken mince
  • 1/3 cup of mild satay sauce
  • 1 onion diced
  • 1 carrot grated
  • 125g corn kernels
  • 4 iceburg lettuce leaf cups


Heat oil in a wok over medium to high heat. Add onion and mince and stir-fry for about 5 minutes or until browned, breaking up mince as it cooks. Add satay sauce and stir-fry until well combined. Add carrot and corn and stir-fry for 1-2 minutes until carrot is tender. Spoon mixture into lettuce leaf cups and serve.
