Salmon & Potato Salad with Lemon Poppy Seed Dressing ( Recipes )

A tasty Christmas meal - Merry Christmas!

Salmon & Potato Salad


  • 750g baby chat potatoes, leave skin on
  • 100g snow peas
  • 100g smoked salmon, cut into thin strips
  • 1/2 yellow capsicum, slices into stips
  • 2/3 cup Australian low fat Natural Yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon zest
  • 2 teaspoons poppy seeds
  • season to taste


Boil potatoes until just tender. Add snow peas to saucepan and cook for 1 minute and drain under cold running water. Allow to cool.

Halve potatoes and arrange in a serving bowl with snow peas, salmon and capsicum.

Combine yogurt, lemon juice, lemon zest and poppy seeds, season to taste and drizzle over salad.
