Egg & lettuce salad cups.

Ingredients: (serves 4-6)
  • 4 eggs
  • 1 red capsicum ( diced)
  • 1 lebanese cucumber (diced)
  • 3 green onions finley sliced
  • 1 carrot, grated
  • 8 iceburg lettuce leaves
  • 1 cup of bean sprouts
  • ¼ cup of corainder
  • 2 tbsp lime juice
  • 1 ½ tsp of sweet chilli sauce
  • 1 tsp of fish sauce

  1. Place eggs in a saucepan and cover with water. Put the lid on the saucepan and bring to the boil. Cook for approximately 10 minutes, leave to cool and then peel the shell off the egg.
  2. Chop the eggs and combine in a bowl with capcsicum,cucmber and onions,carrot and bean sprouts. Combine lime juice and sauces in a bowl, and whisk with a fork. Pour over the vegetable mixture and gentle mix through.
  3. Serve the mixture into lettuce leaves and serve! A great entrée when entertaining or an easy lunch
