Simple Soba Noodles

Ingredients (serves 1)

  • 1 1/2 cups reduced salt vegetable stock
  • Handful soba noodles (approx 50g )
  • 3 heads baby bokchoy, leaves separated
  • 1 sliced carrot (or any ‘free veggies’ you may have in the fridge- you want the soup to be chunky to make it more filling!)
  • ½ cup of bean shoots
  • Large pinch chili flakes, optional
  • 1 tablespoon of soy sauce


Bring stock to the boil in a medium saucepan. Add noodles and simmer for 2 minutes .Add bokchoy, vegetables and chili and soy sauce and simmer for another minute or until noodles are only just cooked (see note above).Remove from the heat. Taste and add extra soy if needed.

Serve hot!
