Low fat Mexican-Quiche ( Recipes )

A Mexican Quiche recipe you won't have to feel guitly about.

Ingredients (serves 4)

350g of tofu (you may like to use cooked lean mince if you don’t enjoy tofu)

2 egg whites

1 whole egg

1/3 cup of non fat milk

2 teaspoons of taco seasoning

½ cup low fat shredded cheese (look for less than 15% fat)

1 onion chopped

¾ cup of salsa dip

½ cup of canned corn kernels

4 tablespoons of low fat sour cream


  1. Preheat the oven to 180 degrees. Spray a 30cm with non stick cooking spray.
  2. In a food processor combine tofu, egg and egg whites, milk, taco seasoning and ¼ cup of shredded cheese. Process until smooth. Stir in onion, salsa and corn. Pour the mixture into the pan.
  3. Bake uncovered for 30minutes (or until you insert a knife and it comes out clean). Sprinkle with the remaining cheese and bake for 3 minute more or until cheese is lightly browned. Serve with one tablespoon of low fat sour cream pre serve.
  4. Serve with green salad and enjoy!
